This book has the recipe for the royal rat. This is a paca fit for a queen. Gibnut "agouti paca" is a wild game mini pig that is a delicacy in Belize. As a Belizean myself, I am extremely excited that some took the time to sit down and document our cuisines in the way "we love it". Now I can get back into the kitchen with this cook book and enjoy the nostalgic moments.

Thank you for doing this!!! I believe everyone one should have a copy of this cook book, both Belizeans and none Belizeans. It's cultural as well as it is historic. I totally love it!!!

This book is inspiring me to try some new recipes. I love, love Belizean food. It's also really easy to follow the recipes. Not all that time intensive.
